Sevi is a contemporary gastronomic laboratory where Peruvian cuisine serves as a dynamic cultural language — born from the intersection of memory, migration, and research.

More than a restaurant, Sevi is a fine-dining project where every element — from the kitchen to the space — forms a cohesive narrative on the evolution of culinary identity. It is a curatorial platform where tradition is deconstructed and reimagined through refined technique.

Every ingredient treated as a subject of investigation. The kitchen as a laboratory — systematic, precise, driven by curiosity rather than convention.

02 Authenticity

Peruvian cuisine as a living cultural fusion. Mestizaje as methodology, not identity. The origin serves the evolution — never the reverse.

03 Contemporaneity

A cuisine in constant motion. The concept of Sevi is not a fixed point — it is a direction. Every season advances the investigation.

Salon

The convivial heart of Sevi — designed for a slow, immersive experience. Two tasting menus (5 and 8 courses) alongside an à la carte selection. A space for dialogue and storytelling where gastronomy comes to life through technique, memory, and contemporary flair.

Table

An exclusive four-seat counter where guests surrender to the creativity of Chef Francys Salazar. Eight courses and amuse-bouches, crafted in real-time without a fixed menu. A performative dialogue between creator and guest — exploring the evolution of Peruvian gastronomy in its most direct form.

What Was Built

Two phases.
One system.

Every deliverable derived from the same conceptual root. The manifesto came first. The visual system followed. The business direction came last — and it was inevitable.

Conceptual
Architecture

The idea before the object. The brand concept was written before a single visual was produced — the manifesto, the methodology, the narrative frame that made everything that followed necessary rather than arbitrary.

Phase 02
Expansion

Once the system existed, the business followed. Every decision — pricing, menu language, campaign structure — derived from the same conceptual root. Expansion without dilution.
